This is my own recreation of the infamous tinolang manok from Noli Me Tangere --
2 tbsp Cooking oil
1 medium red onion
6 cloves garlic, crushed
1 tbsp turmeric powder
½ kilo Chicken
2 cups chicken broth
Fish sauce (patis) to taste
1/4 kg. kalabasa (cubed)
Dahon ng sili (chili leaves) or dahon ng malunggay (moringa leaves)
1. Saute the garlic, onion, and ginger in hot oil...
2. Add the chicken and allow the meat to turn brownish. Sprinkle some turmeric powder on the browning meat.
3. Season with fish sauce and allow to boil in medium heat.
4. Add the squash cubes once the chicken meat is tender. Simmer until the squash also becomes tender.
5. Top with dahon ng sili or malunggay then turn off the heat. Serve while hot.
